TO CORN MEAT (BEEF OR GAME)

Enough for 100 pounds.

4   pounds  dairy salt
1   pound   sugar, white
3   oz      saltpeter
1   oz      baking soda
1   oz      red pepper
2   gal     water

Boil, and cool.  Pour over meat that has been soaked in mild 
salt water a few hours and drained.  Then pack tight in a barrel.
Pour brine over meat.  After two weeks take meat out; boil brine, 
skim, cool.  Pour over meat.  Will keep a long time.
